fix: remove python2 from yocto-builder after moving to noble

This is required for DOOCS (RPC) on Tumbleweed

Needed for tests in DeviceAccess-CommandBasedBackend

This could result in logfiles being used from previous runs

It was sometimes colliding with the Jenkins build which hence fails

Needed for DeployTool

Also change the login_docker* scripts to run docker with --privileged,
otherwise the write access to /proc/uio-dummy will fail (aligns the
Docker parameters with the ones used in Jenkins)

Looks like some recent? change in open62541 or the proxy project made it
prefer mbedtls instead of openssl

Should fix DOOCS builds on noble builder
